Well, this is a regular tofu scramble, with Follow Your Heart cheese and ground black pepper: the home fries are the standout because they're sweet potato and carrot. Use a lot more sweet potato, a little bit of carrot (like 2" piece) and grate some fresh ginger in to taste. Of course, a little Tabasco can't hurt either.
The greens are pea shoots, which I was very happy to find this time of year.
