I went to a mashed-potato waffle party about a month ago and even brought my George Foreman grill, but it was so swamped I didn't stay. So I made these tonight; they were just excellent—no sauce of any kind, just a few slices of avocado. They were also pretty easy; I might just have to have a mashed-potato waffle party myself.

(I swear, I don't know why I've never seen these on a brunch menu before. These that I made are vegan and easy; maybe I should open a diner?)

I've never eaten mashed-potato pancakes before. They look delicious!

I have a GF grill, would you happen to have a recipe?

I just made mashed potatoes and then cooked them into waffles in the grill. If you just have the little one without the removable plates, I'm sure they make great pancakes too.

The potatoes:

• Simmer in boiling water until you can stick a fork easily into one.

• Add margarine, salt to taste, and a little liquid (I used So Delicious coconut-milk beverage, but you can use oat, almond, rice milk, or even water.) I added chopped garlic. Mash together with potato masher.

• Spray both plates of griddle and cook waffles as if you were using regular batter.

I use soy milk in my mashed potatoes; I tried almond once, but almond milk does tend to leave the almondy taste that just didn't sit right. :( The chocolate almond milk makes a great drink. :)

I had no idea you could just use straight mashed potatoes like waffle batter. You learn something new every day. I thought there'd be something more to it.
